Vanilla Chia Pudding
A make-ahead pudding where chia seeds thicken into a creamy, protein-rich treat.
Chia seeds swell and set as they soak, turning a simple mix of milk and vanilla into a thick, tapioca-like pudding. It is naturally rich in fiber and plant omega-3s, and it sets itself in the fridge while you sleep.
Ingredients

- 0.25 cup chia seeds
- 1 cup milk of choice
- 1 tsp vanilla extract
- 1 tbsp maple syrup , to taste

Method

Whisk the chia seeds, milk, vanilla, and maple syrup together, then wait five minutes and whisk again to break up any clumps.

Cover and refrigerate until thick and set, at least four hours or overnight.

Stir, spoon into cups, and top with fruit or nuts before serving.
Notes
If the pudding is thicker than you like, loosen it with a little extra milk before serving.
